COFFEE MUG CAKE – Perfect in the Peppermint Twist Mugs or any other microwavable mug.

Directions:

Generously spray inside of coffee mug with cooking spray. Empty contents of cake mix packet (see cake mix directions below) into cup. Add 1 tbsp oil & 2 tbsp water and mix about 15 seconds, carefully mixing in all the dry mix. Microwave on full power 2 minutes.

(You may not get satisfactory results in a low wattage small microwave.)

While cake is cooking, place ingredients from “Glaze Mix” (see bottom) into very small container & add 2 tsp water. Mix well. When cake is done, pour glaze over cake in mug. Enjoy while warm!   Also very good with Celebrating Home Praline Dip Mix, ice cream or any type of whipped cream.

CAKE MIX Directions

This will make about 4 to 4½ cups of dry mix and will make 8 to 9 “Coffee Mug Cake” mixes.

1 cake mix (any flavor)
1 (4 serving size) instant pudding mix (not sugar free) any flavor
1/3 c. of “Just Whites” egg replacer

Place dry cake mix, dry pudding mix & egg replacer, into a large bowl and blend well with a wisk. Place ½ cup of dry mix into a corner of a sandwich bag and tie it there with a twist tie. Continue making packets until all your dry mix is used.

Lemon cake mix – Lemon pudding mix
Yellow cake mix – Chocolate pudding mix
Devil’s food cake – Chocolate pudding mix
Pineapple cake mix – Coconut pudding
Butter cake mix – Butterscotch pudding

Glaze Mix Packets

1/2 cup powdered sugar
1 ½ tsp dry flavoring – ex: powdered lemonade mix, powdered orange breakfast drink mix, cocoa powder, or vanilla powder (sold by coffee flavorings)
